The Berry Best Snacks

Berries are disease-fighting wonders. Full of the good stuff like vitamin C, folate, fiber and phytonutrients, berries are like food superheroes, only, you know, without the capes. Pair them with lean proteins for a berry filling, berry tasty snack, like one of these:

Top high-protein vanilla Greek yogurt with 1 cup of microwaved berries, then top with a little reduced-fat Reddi-wip. (Tip: Freeze the yogurt for an hour first.)
Add 1 cup of berries to a high-protein cereal with skim or soy milk.
Top plain Greek yogurt with 1 cup of mixed berries and a handful of nuts for an ideal, balanced breakfast.
Create your own trail mix with freeze-dried berries and raw almonds or walnuts.

Want (Zucchini) Fries with That?

One of our restaurant favorites is our friend zucchini. But since we’re pretty sure all that oil erases any good we’ve done by ordering veggies, we opt for these ridiculously tasty baked versions. It’s one compromise that will have you licking your fingers.

Ingredients:

1/2 cup seasoned dry bread crumbs
1/8 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
2 egg whites 2 medium zucchini, cut into 3-inch sticks

Directions:

Preheat the oven to 475 degrees. Combine bread crumbs, pepper and Parmesan cheese in a small bowl. Place the egg whites in a separate bowl. Dip zucchini into the egg whites, then coat with the bread crumb mixture. Bake for 5 minutes in the preheated oven, then turn over and bake for another 5 to 10 minutes, until browned and crispy. Serves 4.

Per serving: 89 calories, 1.3 grams of fat, 13 grams of carbohydrates, 1.8 grams of fiber and 6 grams of protein.

Just Desserts

A wise man once said, “A life lived without dessert is not worth living.” Or, um, so we’ve heard. Anyway, Fitness magazine (August ‘08) offers these sweet and scrumptious reasons for living that couldn’t be easier to throw together or taste more indulgent. And for 150 calories, they couldn’t fit any better into your healthy eating plan.

Sauteed Strawberry Sundae: Saute 1 tablespoon of vinegar, 1 tablespoon of honey and 1/4 cup of strawberries for 3 minutes. Pour over 1/2 cup of light vanilla ice cream.

Dark Chocolate-Covered Graham Crackers: Microwave 2 tablespoons of semisweet chocolate chips for 30 seconds (until just melted). Spread onto 4 small graham cracker rectangles and let sit for 10 minutes.

Question: How do I save the seeds from some of my bean plants and store them over the winter to plant next year?

Answer: It’s relatively easy to save seeds of legumes, such as peas and beans, as long as they are open-pollinated (non-hybrid) varieties. Beans rarely cross-pollinate with other beans, so the seeds you collect will probably come true-to-type next year. Select the healthiest bean pods from the healthiest plants. Let the pods dry on the plant, and brown well beyond the fresh-eating stage. This allows the bean seed inside to mature. When the bean pod is fully dry and begins to split open (or before a frost), harvest the beans and bring them into a dry, well-ventilated room. For small numbers of pods, remove the seeds by hand. For large numbers of pods, place the pods in a burlap sack and whack the sack with a stick until the seeds are removed from the pods. Separate the seed from the chaff and store the beans in a glass jar in a cool, dark place.

Question: My husband and I recently purchased a home in Vermont with a row of hazelbert shrubs out front. Can you tell me how I should harvest and store the nuts?

Answer: First, you’ll probably have to fight the squirrels over the nuts. They love eating hazelberts. I’d suggest placing some netting over the shrubs as the nuts begin to ripen. Harvest nuts when they yield to being gently tugged by hand. Dry the nuts on a screen in a warm, well-ventilated area for 2 to 4 days. Shell the nuts with a mechanical sheller or nutcracker. As they dry, the nutmeat becomes firm and cream-colored.

The nuts can be stored in the freezer in bags. They will maintain their quality for up to one year. You can roast dried hazelberts to bring out their flavor. Roast in a shallow pan in a 275-degree F. oven for 20 to 30 minutes or until the skin cracks. Roasted nuts only last a few months in storage so roast them in batches as you need them.
